Lumpia (Filipino Spring Rolls)

Ingredients

  • 20 lumpia wrappers (small spring roll sheets)
  • 500 g minced meat (pork or chicken)
  • 1 egg (size M)
  • 2 carrots, finely grated
  • 1 medium onion, chopped
  • ½–1 bunch parsley, finely chopped
  • 2+ garlic cloves, chopped
  • ½ tsp mustard
  • (Optional) 20 g grated Parmesan
  • Salt & pepper to taste

Glue:

  • 50 g flour
  • 50 ml water

For frying:

  • Oil as needed

  1. Prepare the filling: Mix all ingredients except the minced meat (carrots, onion, parsley, garlic, egg, mustard, Parmesan, salt & pepper) in a bowl until well combined.

  2. Add the minced meat and mix thoroughly with the prepared ingredients until a uniform mixture is formed.

  3. Make the glue: Stir together flour and water until you get a smooth, thick paste. This will be used to seal the lumpia wrappers.

  4. Rolling: Place one spoonful of filling on a wrapper, roll tightly, and seal the edges with the flour paste.

  6. Frying: Heat oil in a deep pan or fryer to about 170–180 °C (340–355 °F). Fry lumpia in batches until golden brown.

  7. Drain on paper towels and serve hot.
